Black tie with ribbons
On Saturday the Calgary chapter celebrated their 25th Anniversary. Over 40 Commandeurs and guests
celebrated the event with a five course dinner prepared by Executive Chef Kenneth Titcombe at the
Ranchmen's Club. The exquisite menu included terrine of Pheasant, wild forest mushrooms and foie
gras with rhubarb and ginger compote, pan seared fillet of Alaskan halibut with saffron, tomato &
Pernod beurre blanc on sautéed spinach, roast rack of Alberta lamb with two sauces: roast garlic
cream and Madeira infused rosemary veal stock. Playing off the flavours of each dish was an inspired
pairing of Bordeaux wines such as Chateau Haut-Batailley 1982, Chateau Leoville-Las Cases 1984 and
Chateaux de Bel Air 1988 (complements of our Grand Maître Michel-Pierre Massonie).
